GUI: deactivate default font size scaling

It seems to cause problems on high DPI displays. Until that's been fixed
it's better to leave font size selection to the user.

GUI: escape file names used in tab titles
...
The & is used for keyboard shortcuts by Qt. Therefore it must be escaped
for tabs where keyboard shortcuts aren't wanted. These are all the tabs
where the file name is used as the tab's title.
Fixes #1603 .

GUI: job files: use the nlohmann::json JSON implementation instead of Qt's
...
Qt's JSON implementation always uses "double" for reading and writing
numbers. A "double", however, only has a precision of roughly 2^53
bits. In Matroska and therefore in mkvmerge's JSON output and through
that in the GUI's job files there are several fields that make full use
of 64bit unsigned integer values (e.g. track UIDs).
